CP-405 Removes Baked-On Carbon and Oil, Decreasing Boil-Out Time and Increasing Process Efficiency

Opportunity

The customer is a snack food manufacturer, specializing in potato chips, pop chips, and more. The manufacturer utilizes a direct heat fryer for their fried products. Because of the high heat of the oil, fryers carbonize any crumbs left behind. This carbon coats the heating elements and reduces their efficiency.
The customer’s fryer cleaning procedure involves first rinse to remove gross soils such as oil and loose crumb deposits, followed by a caustic boil-out. In the boil-out, the fryer is filled with enough water to cover the heating elements by about 2-3 inches or to the oil level (whichever is higher). The caustic cleaner is added, and the solution is heated to 180°F (82.2°C) to boiling. Upon completion of the cleaning cycle, the solution is drained, and the fryer is rinsed with water to remove residual soil and cleaner. An acid rinse is conducted to neutralize any residual alkalinity and to reduce sticking during start-up. In the final step, the fryer is rinsed until it reaches the pH of the city water and blown dry, allowing for the oil to be reintroduced.
The manufacturer was utilizing a competitor’s cleaner during the boil-out process, requiring 8 hours of boiling time in order to remove all remaining carbonization. DuBois partnered with the manufacturer to implement CP-405, a heavy-duty alkaline detergent. Its unique formulation is built to provide superior wetting, even at high temperatures. CP-405 is highly concentrated to provide optimal use-cost performance and saves time and labor with fast soil penetration and emulsification.

Results and Benefits

The customer began running CP-405 in their boil-out, and immediately noticed an improvement to cleaning time. Soils were quickly removed from the surface and the cleaner’s foam quality persisted, despite high boiling temperatures.
CP-405 fully removed all the oils and carbonized soils within 3 hours, where the competitive product took 8 hours – a 62.5% improvement! This provided the customer an extra 5 hours of production time, allowing them to drastically increase their daily yield.
